Rich. Decadent. Fudgy. Double Chocolate Brownies.
I grew up eating Little Debbie Fudge Brownies and fudge brownie box mixes, both of which I still love. Maybe that created in me the longing for fudgy brownies and I really never strayed from these packaged brownies for years until I was forced on the quest to make the best homemade fudgy brownies.
I went on the quest to find the best homemade brownie recipe while living in Asia, where I couldn’t find my favorite box mix. One of our friend’s birthdays was coming up and he loved brownies and I have this complex in wanting to be the person that makes the BEST of someone’s favorite treat. (Requests anyone?!) Even while dating Matt – @TheRealCookieMonster – I went on a quest to make the best chewy chocolate chip cookies he ever had… you can find out if I did in another post!
BUT. Did I make the best brownies?
I wouldn’t be posting this recipe if I didn’t, would I?!
Not a Coffee Lover? Don’t Worry.
At the time I had found a recipe that I thought sounded like it could work, especially with the addition of the coffee, which I knew brought out chocolate flavor. It was a hit! If I remember correctly, I believe this friend did claim that they were the best brownies he had ever had.
Since then I have changed the recipe here and there to make it my own and it’s now a MUST-BAKE in our house. If you are not a coffee lover, don’t worry! The coffee just brings out a richness and flavor of the chocolate. The brownies don’t taste like coffee. And these are the best brownies I’ve ever had. (Sorry, Little Debbie, Betty Crocker, Duncan Hines…)
Five tips to make the best:
- BUTTER: Don’s use butter that tastes like the fridge. You know what I mean. Get some good, fresh butter. Surprisingly, I think Sam’s Club Sweet Cream Butter is very good!
- COFFEE: Splurge and use good coffee – if you’re local, here is my favorite.
- SEMI-SWEET CHOCOLATE CHIPS: Nothing else. (I’ve tried dark chocolate and mix of semi-sweet and milk chocolate and I think Nestle Toll House Semi Sweet Chocolate Chips is where it is at.)
- VANILLA: A good, strong vanilla. I really love Watkins Baking Vanilla over other brands. Pure vanilla or homemade vanilla could do the trick!
- BAKE TIME: You have to watch your brownies as they near the 30 minutes of bake time. To get the fudgy texture they have to be a bit gooey, and not overdone.
But even if you bake them too long or use an ingredient against my suggestions (how dare you, haha!), how much can you really mess up a wonderful hunk of chocolate?!
The Best Homemade Fudgy Brownies

Ingredients
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
2/3 cup salted butter, melted and divided 1/3 and 1/3
1/2 cup hot coffee
2 cups sugar
2 large eggs
2 teaspoons vanilla
1 teaspoon salt
1 1/3 cup all purpose flour
2 cups (12-ounce package) semi sweet chocolate chips
Directions
- Preheat oven to 350 degrees F.
- Line a 9×13 cake pan with parchment paper
- Stir together cocoa powder and baking soda
- Stir in 1/3 cup melted butter until smooth
- Stir in hot coffee* until smooth and thick
- Stir in sugar, eggs and remaining 1/3 cup of butter
- Stir in vanilla and salt until smooth
- Add both the flour and chocolate chips at the same time
- Stir until just combined – not too much!
- Pour batter into prepared pan and bake 30-35 minutes The edges should be crisp and the middle slightly gooey.*
- For best fudgy texture, let cool 1 hour. But some can’t resist a hot brownie – YUM!

Notes
- *It is best if you use freshly brewed coffee and of course, your favorite coffee! If you are not a coffee lover, don’t worry. This coffee just brings out the richness of the chocolate. The brownies don’t taste like coffee.
- *To get the perfect fudgy texture, you want your brownies to be slightly underdone. Every oven is different, so it is best to check your brownies after 30 minutes. Stick a clean knife or toothpick into the middle. If it comes out with liquid batter, continue baking, checking every 5 minutes until the knife comes out with bits of gooey brownie on it.
